Chewy Sugar Cookies

Chewy Sugar Cookies are excellent for holidays, or simply just an everyday sweet treat.



Prep Time: 1 Hour and 30 Minutes plus chilling

Bake Time: 12 Minutes per batch

Makes about 76 cookies

Ingredients
3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup butter (2 sticks), softened (do not use margarine)
1 1/2 cups white sugar
2 large eggs
1 teaspoon vanilla extract


Instructions

1. In a large bowl, combine flour, baking powder, and salt. In a seperate large
bowl, with mixer at low speed, beat butter and sugar until blended. Increase
speed to high; beat until light and fluffy, about 5 minutes. Reduce speed to low;
beat in eggs and vanilla until mixed, then beat in flour mixture just until blended,
occasionally scraping down the sides of the bowl witha rubber spatula. Divide dough into
4 equal pieces; flatten each in a disk. Wrap each disk in plastic and refrigerate overnight

2. Preheat oven to 350 degrees fahrenheit. On lightly floured surface, with floured rolling pin,
roll 1 piece of dough until slightly less than 1/4 inch thick; keep remaining dough refrigerated.
With floured 3- to 4-inch cookie cutters, cut dough into as many cookies as possible; reserve trimmings.
Place cookies, 1 inch apart, on 2 ungreased large cookie sheets.

3. Bake until edges are golden, 12 to 15 minutes, rotating cookie sheets between upper and lower oven racks
halfway through baking. Transfer cookies to wire racks to cool completely. Decorate
with frosting, if desired.

4. Repeat with remaining dough and trimmings.

Homeade Butterbeer

A treat that you might know from Harry Potter, this sweet beverage can warm up your day.



Prep Time: 5 minutes

Cook Time: 3 minutes

Makes About 2 servings

Ingredients
1/4 cup sweetened condensed milk
1/4 butterscotch topping
2 tablespoons whipped butter, room temperature
1 1/2 cups vanilla cream soda
Old fashoned butterscotch candy sticks for garnish

Instructions

1. Combine condensed milk, butterscotch topping, and butter in a glass heatproof measuring cup.
Heat in microwave for 1 minute. Remove and stir until butter has melted and incorporated into mixture.
Meanwhile heat cream soda in another heatproof measuring cup for 1 minute 30 seconds

2. Divide butterscotch mixture between two 10- to 12-ounce mugs. Fill mugs with heated cream
soda and stir thoroughly. Serve garnished with an old-fashioned butterscotch candy stick.

Apple pie

There's nothing like a warm slice of apple pie topped with ice cream.


Total time: 1hour and 30 minutes
Makes about 8 sevings

Ingredients

1 recipe for a nine inch double crust pie
1/2 cup unsalted butter
3 tablespoons all-purpose flour
1/4 cup of water
1/2 cup white sugar
1/2 cup brown sugar 8 granny smith apples; peeled, cored and sliced

Instructions

1. Preheat oven to 425 degrees.
2. Melt butter in a saucepan.
3.Stir in flour to form a paste.
4. Add water, white sugar, brown sugar, and bring to boil.
5. Reduce temperature and let simmer.
6. Place crust in the bottom of the pan.
7. Fill with apples mounded slightly.
8.Cover with a latice crust.
9.Gently pour the sugar and butter over the crust. Pour slowly so that it doesn't run off the crust.
10. Bake 15 minutes in preheated oven. Reduce to 350 degrees. Continue baking for 35 to 45 minutes, until the apples are soft.
